The Lamington, a square of sponge cake dipped in chocolate icing and coated in desiccated coconut, is an undisputed Australian icon. Its origin is a topic of friendly debate, but most stories point to Lord Lamington, the Governor of Queensland from 1896 to 1901. Legend has it that his chef, Armand Galland, was asked to prepare a treat for unexpected guests at short notice. He dipped leftover sponge cake in melted chocolate and rolled it in coconut to make it more appealing. The guests were so impressed that the recipe became a sensation, forever bearing the Governor's name. Today, the Lamington is a staple at bake sales, cafes, and family gatherings across the country, a symbol of Australian hospitality and culinary ingenuity.

Anzac biscuits have a poignant history tied to the Australian and New Zealand Army Corps (ANZAC) soldiers of World War I. These sweet, hardy biscuits were sent by wives and women's groups to soldiers abroad because the ingredients—rolled oats, flour, sugar, butter, golden syrup, and baking soda—did not spoil easily and could survive long sea voyages. The absence of eggs was key to their longevity. More than just a source of sustenance, these biscuits were a taste of home and a symbol of love and support from afar.
